Organic, Gluten-Free, Vegan, Blueberry Muffins

Perfect for a Sunday brunch. Kids love it and you will too! ENJOY!!!

 

DRY INGREDIENTS:

1 cup freshly ground organic buckwheat flour
1 cup organic coconut flour
1/2 cup freshly ground organic almond flour
1/4 cup organic coconut sugar
2 tsp baking powder
1 tsp baking soda

 

WET INGREDIENTS:

1/4 cup melted extra virgin coconut oil
2 tsp organic vanilla extract
2 cups unsweetened organic apple sauce

1 1/2 – 2 cups fresh organic blueberries

 

Mix the dry and wet ingredients separately, then add the wet ingredients to the dry and mix well. Fold in the organic blueberries. Spoon into muffin tins, press down gently to help them conform to the tin. Bake for 25 min. Makes 12.
